Real Food with Steph: Banana Pops

When I was younger, we used to make banana pops with my mom. These were the best treats during the hot, humid, sweltering Minnesota summers. Other kids got popsicles, but my mom insisted on real food. And, NOTHING is better than these banana pops when it's hot as f*ck outside. 

Partly nostalgia, but also partly nutritionally, I make these banana pops for post-run treats during the summer months. Sometimes I add coconut, chopped nuts, or even sprinkles (yay color!) for some extra crunch and texture. These banana pops are a well balanced snack- they have a good simple carbohydrate base (banana) and the nut butter provides some fat and protein. Much better than a popsicle...

Banana Pops

2 bananas, cut in half
4 T nut butter
4 T dark chocolate (I use 90% cocoa)

Directions

Melt chocolate and peanut butter over low heat, stirring to prevent burning. Once melted together, remove from heat and dip bananas in the mixture (or use a spoon to pour it over the bananas). Place on a plate lined with parchment paper and freeze for at least 45 min. Store in an airtight container in the freezer for up to a week (HA- as if they'd last that long!).

Serve after a sweaty run in the heat, or when you need a cool treat to enjoy poolside.
